Vegan Christmas Dinner

  • Red Cabbage:
  • 1 medium head red cabbage, sliced
  • 2 Tbsp (24g) coconut sugar
  • ¼ tsp salt
  • 1 cup (250ml) red wine
  • ⅓ cup (80ml) balsamic vinegar
  • ¼ tsp cinnamon
  • 3 dried bay leaves
  • ½ cup (125ml) water
  • 2 Tbsp (30ml) olive oil
  • 1 white onion, diced
  • Dumplings:
  • 4 regular buns (300g), diced
  • ¼ cup (50g) chickpea flour
  • 1 cup (250ml) oat milk
  • ½ tsp salt, to taste
  • 2 Tbsp (30ml) olive oil
  • 1 large onion, diced
  • ½ cup parsley, chopped
  • 3 Tbsp (25g) breadcrumbs
  • dash of pepper
  • Gravy:
  • 2 Tbsp olive oil (30ml)
  • 1 medium red onion, diced
  • 1 garlic clove, sliced
  • 5 mushrooms, diced
  • 1 carrot, diced
  • ¼ cup (60ml) red wine
  • 2 Tbsp flour
  • 1 Tbsp tomato paste
  • 2 Tbsp (30ml) soy sauce
  • 1 Tbsp (15ml) maple syrup
  • 1.5 cup vegetable broth
  • Vegan “Duck” Style Bites:
  • 4 Tbsp (60ml) olive oil
  • 2 packages @veganz 'duck' style bites
  1. Red Cabbage:
  2. Place the sliced cabbage into a large bowl. Add the sugar and salt and massage for 2 minutes. Add the wine, vinegar, and cinnamon and combine. Add the bay leaves, cover with a towel and let rest for 2 hours. Place a large pot with the oil over medium heat. Add the onions and sauté until golden. Add the cabbage mixture and water and close the lid. Reduce to low-medium heat and cook for 1 hour, taking off the lid the last 10 minutes (make sure to check and stir once in a while).
  3. Dumplings:
  4. Cut the buns into small cubes and place in a bowl. Add the chickpea flour to a small bowl and add a few Tbsp of the milk to form a paste. Pour the remaining milk over the diced buns. Add in the chickpea paste and salt and combine. Place the oil in a pan over medium heat. Add in the onions and sauté until golden brown. Add the parsley, breadcrumbs and pepper and combine. Add to the bun mixture and combine. Use your hands to form 8 dumplings and set aside. Bring a large pot of salty water to a boil, then reduce to a light simmer. Add in the raw dumplings and cook for 15-20 minutes until tender, then drain and serve.
  5. Gravy:
  6. Place the oil in a pan over medium heat. Add in the onions and sauté until golden brown. Add the garlic, mushrooms and carrot and cook a few minutes. Add the remaining ingredients and combine. Bring to a boil and reduce to a light simmer for 1-2 minutes, then set aside and let cool down a bit before placing the mixture into a blender. Blend 30 seconds until smooth and set aside to serve.
  7. Duck Style Bites:
  8. Place the oil in a pan over medium heat. Add the “duck” style bites and fry for a few minutes until golden brown, then serve immediately.
