Summer time means ice cream almost every single day! With temperatures rising I’ve been craving more and more fruity breakfasts and snacks in the form of smoothies and fresh fruit. This Healthy 3-Ingredient Ice Cream is probably the easiest way to stay hydrated and healthy for the upcoming months! 🙂 It’s not only super simple to make, but also completely plant-based, refined sugar-free and jam-packed with so many vitamins your body needs. The perfect way to satisfy your sweet tooth without that guilt feeling!
I decided to go for a variation of creamy raspberry-coconut & tropical papaya-pineapple, but the possibilities are endless! In order to make it really creamy, I added coconut milk, but any other plant-based milk will work as well.
Both types are extremely flavourful, fruity, hydrating and wonderfully sweet. Forget conventional ice creams with all the added refined sugars and fats and indulge in these sweet pleasures! They don’t only look really pretty but are actually super good for you!
If you’re not a big fan of any of the used fruits, create your own versions! The great thing is that any fruit will work! Just get creative… 🙂

- Raspberry:
- 4 frozen bananas, sliced
- 1 cup frozen raspberries
- 2 Tbsp coconut milk (or any other plant-based milk - the higher in fat, the creamier)
Papaya-Pineapple:- 4 frozen bananas
- 1 cup frozen papaya
- ½ cup frozen pineapple
- 2 Tbsp coconut milk (or any other plant-based milk - the higher in fat, the creamier)
- Simply place all the ingredients into your high-speed blender and mix until smooth. Use your tamper stick to mash everything down.
- Pour the liquid ice cream into a plastic container and place in the freezer for 1 hour.
- Once firm, serve in fresh fruit and enjoy!

Do you know what other plant-based milk has the highest fat content instead of using coconut milk? My family hates the overpowering taste of coconut in most vegan desserts.Thanks.
I think almond or cashew milks are pretty high fat, but you gotta check the actual percentage of nuts. The higher the percentage, the creamier it’ll be 🙂
