Looking for a yummy but healthy lunch/dinner, which can be prepared in less than 15 minutes? Here you go! This is one of my favorite quick meals and I prepare it about 3 times a week at least! If you’re following this blog for some time, you might know that I absolutely love peanut so, of course, you’ll also find it in this dish ;-). My newest addiction is soba noodles, just because it takes about 5 minutes to make them and I love the taste of buckwheat! If you haven’t tried them already, go to your nearest Asian store and try them out! They are gluten-free and after eating them you won’t feel as full as with normal wheat pasta, which I really like! 🙂
- 100g soba noodles
- ⅓ cup green onions, cut into pieces
- ⅓ cup edamame, cooked
- 1 carrot, sliced
- 1 cucumber, spiralized
- 1 Tbsp whole sesame seeds (black or natural)
- 2 Tbsp natural peanut butter
- 1 Tbsp tamari sauce
- 2-3 Tbsp warm water (depending on desired consistency)
- Cook the soba noodles according to the instructions on the package.
- In the meantime, cut and slice up the veggies.
- For the sauce whisk all ingredients together in a small bowl (add more water if you want to be more liquid).
- When the noodles are ready, mix everything together in a big bowl and top with sesame seeds! If you prefer, you can let the noodles cool down a bit before adding into the bowl.

Quick and excellent recipe, love the taste of the homemade peanut butter. For Italian readers, I buy the pasta di grano saraceno (same ingredient: buckwheat), they are just as good and about half the price if not less then the imported noodles.
